Rustic Tomato Soup for One

Tomatoes with garlic and onions for roasting

This is the ultimate fall classic tomato soup for 1 Person.

Do you never know what to do with your excess tomatoes towards the end of the season, or just want to learn how to make the best rustic tomato soup!?

Welcome to the perfect place. Lets take our beautiful fresh tomatoes and blend them to perfection in this classic tomato soup recipe. :) 

Recipe

 

2 Large Tomatoes (Tomatoes about the size of a Beefsteak tomato, I used Belgium Pink) 

1 cup of Cherry Tomatoes (I used Yellow Pear)

1/4 of an Onion, cut into chunks 

1 Cup Vegetable Broth

4 Garlic Cloves, Roasted 

1 Tbsp Olive Oil

Sprig Of Fresh Basil 

Pinch of Salt

Procedure

Roasting:

Preheat the oven to 425 °F 

Cut the larger tomatoes into large cubes and the cherry tomatoes into halves. Cut the onion into large chunks. Place tomatoes and onions into a non stick roasting pan, I used glass. Sprinkle salt and cracked pepper onto the tomatoes and onions. 

Place the roasting pan into the oven for 40 minutes.

Take a  few garlic cloves still in their skins, and place into the oven for 10 minutes. 

After 10 minutes take the garlic and pan out 

Squeeze the garlic out of their skins into the roasting pan, and add 1 Cup of Vegetable Broth.

Put back into the oven for the remaining 30 minutes. 

 

Stovetop

After the 40 minutes, take out the pan and place the remaining liquids and vegetables into a blender. Blend until smooth. 

Place the liquid into a small pot, add sprig of basil, and simmer for about 15 minutes.

Enjoy with your favorite grilled cheese :)
